Making Yogurt Mousse with a Thermomix is a quick and easy way to prepare a creamy, light dessert. The Thermomix makes it simple to blend ingredients to a perfect consistency, and the result is a smooth and velvety mousse that can be customized with fruits, chocolate, or other flavorings.

Here’s a simple recipe for a Yogurt Mousse using the Thermomix:

Ingredients:

  • 2 cups (500g) Greek yogurt (or regular yogurt)

  • 1 cup (250g) heavy cream (or double cream for richer mousse)

  • 1/4 cup (50g) powdered sugar (adjust to your sweetness preference)

  • 1 teaspoon vanilla extract (optional)

  • 2 teaspoons gelatin powder (or agar-agar for a vegetarian version)

  • 3 tablespoons water (for dissolving gelatin)

  • Fresh fruit, berry compote, or chocolate shavings (optional, for serving)


Instructions:

1. Prepare the Gelatin:

  • In a small bowl, dissolve the gelatin in the 3 tablespoons of water. Set it aside for 5 minutes to bloom.

  • Once bloomed, gently heat it in the microwave for 10-15 seconds or in a small saucepan until fully dissolved. Allow it to cool slightly.

2. Whisk the Cream:

  • Place the heavy cream into the Thermomix bowl and attach the butterfly whisk. Set the Thermomix to Speed 4 and whisk for 2 minutes or until soft peaks form. Be careful not to overwhip.

  • Remove the whipped cream from the bowl and set it aside.

3. Blend the Yogurt and Sweeteners:

  • In the same Thermomix bowl, combine the Greek yogurt, powdered sugar, and vanilla extract (if using). Blend on Speed 4 for about 15 seconds to smooth out the yogurt and mix in the sugar.

4. Add the Gelatin:

  • With the Thermomix set to Speed 3, pour the dissolved gelatin into the yogurt mixture through the lid opening. Blend for another 10-15 seconds to ensure it’s well combined.

5. Fold in the Whipped Cream:

  • Remove the butterfly whisk and add the whipped cream to the yogurt mixture in the Thermomix bowl. Use the spatula to gently fold the cream into the yogurt mixture (you can also do this on Speed 2 for 10 seconds if you prefer a little more incorporation). The mousse should remain light and airy.

6. Chill:

  • Spoon the mousse into individual serving glasses or bowls. Chill the mousse in the fridge for at least 2-3 hours, or preferably overnight, until it firms up.

7. Serve:

  • Before serving, top the mousse with fresh fruit, berry compote, or a drizzle of chocolate syrup for extra flavor. You can also garnish with a sprinkle of nuts or granola for a crunchy contrast.


Tips:

  • Sweetener Variations: If you prefer a natural sweetener, you can replace powdered sugar with honey, agave syrup, or maple syrup. Adjust the quantity to taste.

  • Flavors: Add a splash of lemon juice or orange zest to the yogurt mixture for a citrusy twist, or a dash of cocoa powder for chocolate-flavored mousse.

  • Vegetarian Option: Use agar-agar as a substitute for gelatin. Follow the instructions on the package, as agar-agar requires boiling to activate.
