White Chocolate Strawberry Cheesecake

Ooooh yes — White Chocolate Strawberry Cheesecake is pure decadence. Creamy, rich, fruity, and perfect for special occasions (or just a really good Tuesday).

Here’s a classic baked version with a white chocolate twist — I can give you a no-bake version too if you’d prefer!


 WHITE CHOCOLATE STRAWBERRY CHEESECAKE

 Ingredients:

Crust:

  • 1 ½ cups graham cracker crumbs (or crushed digestive biscuits)

  • 2 tbsp sugar

  • 6 tbsp melted butter

Filling:

  • 12 oz white chocolate (good quality), chopped

  • 3 (8 oz) packages cream cheese, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • ½ cup sour cream

Topping:

  • 1 ½ cups fresh strawberries, sliced

  • Optional: strawberry jam or sauce for glazing


 Instructions:

1. Preheat & Prep:

  • Preheat oven to 325°F (160°C).

  • Grease a 9-inch springform pan and wrap the bottom with foil (to prevent leaking in water bath).

2. Make the crust:

  • Mix graham crumbs, sugar, and butter. Press into the bottom of the pan.

  • Bake for 8 minutes, then cool.

3. Melt white chocolate:

  • Melt white chocolate gently over a double boiler or in 20-sec bursts in the microwave. Let it cool slightly.

4. Make the filling:

  • Beat cream cheese until smooth. Add sugar and mix well.

  • Add eggs one at a time, beating on low.

  • Add vanilla, sour cream, and melted white chocolate. Mix until smooth and creamy.

5. Bake:

  • Pour filling over crust.

  • Bake in a water bath (place pan in a larger dish with hot water) for about 55–65 minutes, or until the center is just set.

  • Turn off oven and let it sit with the door cracked for 1 hour, then refrigerate at least 4 hours or overnight.

6. Add topping:

  • Arrange sliced strawberries on top. Brush with warm strawberry jam if you want that shiny, glazed finish.
