Here’s a rich, decadent recipe for White Chocolate Strawberry Cheesecake — smooth, creamy, and bursting with berry flavor. It’s perfect for special occasions or when you just want to treat yourself to something indulgent.


🍓 White Chocolate Strawberry Cheesecake

Ingredients

🧁 Crust:

  • 1½ cups graham cracker crumbs (or digestive biscuits)

  • 2 tbsp granulated sugar

  • 6 tbsp unsalted butter, melted

🍫 Filling:

  • 24 oz (675g) cream cheese, softened

  • 1 cup granulated sugar

  • 3 large eggs

  • 1 tsp vanilla extract

  • 8 oz white chocolate, melted and slightly cooled

  • ½ cup sour cream

  • ¾ cup pureed fresh strawberries (strain if watery)

  • Optional: 1–2 tbsp flour or cornstarch (for thicker texture)

🍓 Strawberry Topping:

  • 1½ cups fresh strawberries, hulled and sliced

  • 2 tbsp sugar

  • 1 tsp lemon juice

  • Optional: 1 tbsp cornstarch mixed with 2 tbsp water (to thicken)


Instructions

1. Make the Crust:

  • Preheat oven to 325°F (160°C).

  • Mix graham cracker crumbs, sugar, and melted butter until it resembles wet sand.

  • Press firmly into the bottom of a 9-inch springform pan.

  • Bake for 10 minutes, then cool while you prepare the filling.

2. Prepare the Filling:

  • Beat cream cheese until smooth.

  • Add sugar and mix well.

  • Mix in eggs, one at a time, followed by vanilla extract and sour cream.

  • Stir in melted white chocolate until fully incorporated.

  • Gently fold in strawberry puree (and flour/cornstarch, if using).

3. Bake the Cheesecake:

  • Wrap the springform pan with foil and place in a larger pan (for a water bath).

  • Pour cheesecake batter into the crust.

  • Place both pans in the oven, and fill the outer pan halfway with hot water.

  • Bake for about 60 minutes, or until the edges are set and the center slightly jiggles.

4. Cool and Chill:

  • Turn off the oven, crack the door, and let cheesecake cool in oven for 1 hour.

  • Remove, cool to room temp, then chill at least 6 hours or overnight.

5. Make the Strawberry Topping:

  • In a small saucepan, combine strawberries, sugar, and lemon juice.

  • Cook over medium heat until strawberries break down (5–10 min).

  • If a thicker sauce is desired, stir in cornstarch slurry and simmer until thickened.

  • Cool before topping the cheesecake.

6. Assemble:

  • Spoon cooled strawberry topping over chilled cheesecake.

  • Garnish with white chocolate shavings or extra fresh strawberries if desired.

Slice with a hot knife for clean edges, and serve chilled with a dollop of whipped cream if you’re feeling fancy.
