Here’s a nourishing and tasty recipe for White Bean and Kale Soup — a hearty, healthy classic that’s perfect for cozy meals any time of year.


🥣🌿 White Bean and Kale Soup

🕒 Prep Time: 10 minutes

🕒 Cook Time: 30 minutes
🍽️ Serves: 4-6


🧂 Ingredients

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 2 carrots, diced

  • 2 stalks celery, diced

  • 1 (15 oz) can white beans (cannellini or great northern), drained and rinsed

  • 6 cups vegetable or chicken broth

  • 1 bunch kale, stems removed and leaves chopped

  • 1 tsp dried thyme or Italian seasoning

  • Salt and pepper, to taste

  • 1 bay leaf

  • Juice of half a lemon (optional)

  • Grated Parmesan cheese (optional, for serving)


🔥 Instructions

1. Sauté veggies:

  • Heat olive oil in a large pot over medium heat.

  • Add onion, carrots, and celery. Cook until softened, about 5–7 minutes.

  • Add garlic and cook for 1 more minute.

2. Add broth & beans:

  • Stir in broth, beans, thyme, bay leaf, salt, and pepper.

  • Bring to a boil, then reduce heat and simmer for 15 minutes.

3. Add kale:

  • Stir in chopped kale and cook for another 5–10 minutes until kale is tender but still bright green.

4. Finish & serve:

  • Remove bay leaf.

  • Stir in lemon juice if using.

  • Taste and adjust seasoning.

  • Serve hot, topped with grated Parmesan if desired.


💡 Tips & Variations

  • Add cooked sausage or diced ham for extra protein.

  • Use kale stems finely chopped for less waste.

  • For a creamier texture, puree a cup of the soup and stir it back in.

  • Swap kale for spinach or Swiss chard.
