Wet Burritos

You got it! Here’s a hearty, cheesy, saucy recipe for Wet Burritos — the kind smothered in enchilada sauce and melty cheese, just like you’d get at a great Mexican restaurant. They’re messy in the best way and completely satisfying.


🌯 Wet Burritos (Smothered Burritos)

🕒 Total Time: ~45 minutes

🍽️ Serves: 4 large burritos


📝 Ingredients:

For the Burritos:

  • 1 lb ground beef (or shredded chicken, pork, or beans for vegetarian)

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 packet taco seasoning (or homemade)

  • 1/2 cup water

  • 1 can (4 oz) diced green chiles (optional)

  • 1 can refried beans or 1½ cups cooked beans

  • 4 large flour tortillas (burrito-size)

  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

For the Sauce:

  • 2 cups red enchilada sauce (store-bought or homemade)

  • 1/2 cup tomato sauce (optional, for a thicker/richer sauce)

  • 1/2 tsp garlic powder

  • 1/2 tsp cumin

Toppings (Optional but Recommended):

  • Sour cream

  • Chopped green onions

  • Fresh cilantro

  • Sliced jalapeños

  • Diced tomatoes

  • Avocado or guacamole


🔪 Instructions:

1. Cook the Meat:

  • In a skillet, cook the ground beef and onion over medium heat until browned. Drain excess grease.

  • Stir in garlic, taco seasoning, and water. Simmer until thickened (5–7 minutes).

  • Add green chiles if using. Stir in beans and heat through. Set aside.

2. Assemble the Burritos:

  • Warm tortillas slightly so they’re pliable.

  • Spoon beef/bean filling into the center of each tortilla. Add a sprinkle of cheese (reserve most for topping).

  • Fold in sides and roll tightly into a burrito.

3. Make the Sauce:

  • In a small saucepan, heat enchilada sauce, tomato sauce (if using), garlic powder, and cumin. Simmer for 5–10 minutes. Taste and adjust seasoning.

4. Bake the Burritos:

  • Preheat oven to 375°F (190°C).

  • Place burritos seam-side down in a baking dish.

  • Pour enchilada sauce over the top until fully covered.

  • Sprinkle with remaining cheese.

5. Bake:

  • Bake uncovered for 15–20 minutes, or until heated through and cheese is melted and bubbly.

6. Serve:

  • Plate the burritos and top with sour cream, cilantro, green onions, and any other toppings you like.


🔁 Variations:

  • Shredded chicken + green enchilada sauce = chicken verde wet burritos

  • Add rice to the filling for more bulk

  • Make mini burritos with smaller tortillas for a party or kids
