Wet Burritos

Here’s a delicious and hearty Wet Burritos recipe — soft flour tortillas stuffed with seasoned meat, beans, and rice, then smothered in a rich red sauce and melty cheese. These restaurant-style burritos are perfect for satisfying cravings at home.


🌯 Wet Burritos (Smothered Burritos)

Ingredients (Serves 4–6):

🌮 For the Burritos:
  • 1½ lbs ground beef or shredded chicken

  • 1 packet taco seasoning (or 2 tbsp homemade)

  • 1/2 cup water

  • 1 cup cooked rice (Mexican rice or plain)

  • 1 cup refried beans or black beans

  • 4–6 large flour tortillas (burrito-size)

  • 1½ cups shredded cheese (cheddar, Monterey Jack, or a blend)

  • Optional fillings: sour cream, sautéed peppers, corn, onions


🍅 For the Red Enchilada-Style Sauce:
  • 2 tbsp oil

  • 2 tbsp all-purpose flour

  • 1/4 cup chili powder

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp ground cumin

  • 2 cups chicken or beef broth

  • Salt to taste


👩‍🍳 Instructions:

1. Make the Sauce:

  1. In a saucepan, heat oil over medium heat.

  2. Whisk in flour and cook for 1 minute until golden.

  3. Stir in chili powder, cumin, garlic powder, and onion powder.

  4. Slowly add broth while whisking. Bring to a simmer and cook 5–7 minutes until thickened.

  5. Season with salt to taste. Set aside.

2. Cook the Meat:

  1. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.

  2. Stir in taco seasoning and water. Simmer until thickened.

  3. Remove from heat and mix in cooked rice and beans.

3. Assemble the Burritos:

  1. Lay out a flour tortilla.

  2. Spoon in a generous amount of meat mixture and a sprinkle of cheese.

  3. Fold in the sides and roll up tightly.

  4. Place seam-side down in a greased baking dish.

4. Smother and Bake:

  1. Pour enchilada sauce generously over burritos.

  2. Top with remaining cheese.

  3. Bake at 375°F (190°C) for 15–20 minutes, until cheese is bubbly and everything is heated through.

5. Serve:

Top with:

  • Sour cream

  • Chopped cilantro

  • Diced tomatoes

  • Avocado or guacamole

  • Pickled jalapeños


🔁 Variations:

  • Use shredded rotisserie chicken or carnitas instead of beef.

  • Make it spicy with chipotle sauce or hot enchilada sauce.

  • Add grilled veggies or pico de gallo inside.
