This recipe features burritos filled with seasoned meat, beans, and cheese, smothered in a rich red sauce, then baked until bubbly. It’s a perfect mix of flavors and textures, combining the comfort of a burrito with the extra kick of the sauce.

Here’s a simple recipe to make Wet Burritos:

Ingredients:

For the Burritos:

  • 1 lb ground beef (or chicken, turkey, or beef stew meat)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1 cup cooked rice (optional, for added texture)
  • 1 (15 oz) can refried beans or black beans
  • 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 6 large flour tortillas
  • 1/4 cup sour cream (optional, for topping)

For the Sauce:

  • 1 (10 oz) can red enchilada sauce (or homemade enchilada sauce)
  • 1/2 cup tomato sauce
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup water (to adjust sauce thickness)

Instructions:

1. Cook the Ground Meat:
  • In a large skillet, cook the ground beef (or chicken/turkey) over medium-high heat until fully browned. Drain any excess fat.
  • Add the chopped onion and minced garlic, and cook for an additional 2-3 minutes until softened.
  • Stir in the taco seasoning (and water if required on the seasoning packet) and cook according to the packet instructions. Add the cooked rice and refried beans, stirring to combine. Set aside.
2. Prepare the Wet Burrito Sauce:
  • In a separate saucepan, combine the enchilada sauce, tomato sauce, chili powder, cumin, salt, pepper, and water. Stir to combine and bring to a simmer over medium heat. Let it cook for about 5 minutes to allow the flavors to meld.
3. Assemble the Burritos:
  • Preheat your oven to 350°F (175°C).
  • Warm the flour tortillas in the microwave for about 20-30 seconds to make them easier to roll.
  • Place about 1/6 of the beef mixture in the center of each tortilla. Top with a sprinkle of cheese.
  • Roll up the tortilla tightly, folding in the sides as you go to enclose the filling. Place the burrito seam-side down in a baking dish.
4. Top and Bake the Burritos:
  • Pour the prepared wet burrito sauce evenly over the top of each burrito, ensuring they are well covered.
  • Sprinkle the remaining cheese over the top of the sauce.
  • Bake the burritos in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
5. Serve:
  • Remove from the oven and let them cool for a couple of minutes.
  • Garnish with sour cream, chopped cilantro, and extra hot sauce if desired.

Tips for Success:

  • Customizable Fillings: You can add other fillings to the burritos, like sautéed peppers, onions, or corn for extra flavor and texture.
  • Add Some Heat: If you like it spicy, you can add chopped jalapeños to the beef mixture or include a dash of hot sauce in the wet burrito sauce.
  • Vegetarian Option: For a vegetarian version, use black beans, pinto beans, or refried beans in place of the ground meat, and add some sautéed vegetables like bell peppers, zucchini, and mushrooms.
  • Make Ahead: You can prepare the burritos and sauce ahead of time. Just cover and refrigerate, and bake them when you’re ready to eat. If they’re refrigerated, you may need to bake for an additional 10 minutes.
