Washboard Cookies

Washboard Cookies are a classic old-fashioned cookie known for their crisp texture, buttery flavor, and distinctive ridged surface—hence the name! They’re often made with coconut and oats for a chewy crunch and sweet bite.


🍪 Washboard Cookies Recipe

🧾 Ingredients:

  • 1 cup unsalted butter, softened

  • 1 cup brown sugar, packed

  • 1 large egg

  • 1 tsp vanilla extract

  • 1½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 cup old-fashioned rolled oats

  • 1 cup sweetened shredded coconut


🔪 Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Cream butter and sugar
    In a large bowl, beat the softened butter and brown sugar until light and fluffy (2–3 minutes).

  3. Add egg and vanilla
    Mix in the egg and vanilla extract until well combined.

  4. Add dry ingredients
    In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients.

  5. Stir in oats and coconut
    Mix until everything is just combined. Don’t overwork the dough.

  6. Shape the cookies

    • Roll dough into small logs (about 2 inches long).

    • Place them on the baking sheet and flatten with a fork to create a “washboard” pattern.

  7. Bake
    Bake for 10–12 minutes, or until lightly golden around the edges. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.


🍽️ Tips:

  • Store in an airtight container for up to a week.

  • For extra texture, add a handful of chopped nuts (like pecans or almonds).

  • Want a twist? Add a pinch of cinnamon or swap vanilla for maple extract.
