🌮 Walking Taco Casserole / Taco Lasagna

🧂 Ingredients:

1 lb ground beef (or ground turkey)

1 packet taco seasoning (or 2 tbsp homemade taco seasoning)

1/2 cup water
-
1 (10 oz) can Rotel (diced tomatoes with green chiles)

1 (15 oz) can black beans, drained and rinsed
-
1 cup frozen or canned corn (drained)
-
2 cups shredded Mexican cheese blend
-
1 bag (9–10 oz) corn chips (Fritos or Doritos), slightly crushed
-
Optional toppings: sour cream, chopped lettuce, diced tomatoes, green onions, jalapeños, avocado
🥣 Instructions:

Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

Brown the meat: In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.

Add seasoning: Stir in taco seasoning and 1/2 cup water. Simmer for 2–3 minutes until thickened.

Mix in extras: Add Rotel, black beans, and corn. Stir to combine. Cook for 2 more minutes.

Layer the casserole:

Layer half of the crushed chips in the bottom of the dish.

Add the meat mixture on top.

Sprinkle 1 cup of cheese over the meat.

Add the remaining chips.

Top with remaining cheese.

Bake for 20–25 minutes, or until cheese is melted and bubbly.

Top & serve: Add your favorite toppings just before serving. Scoop and serve hot!
