Walking Taco Casserole or Taco Lasagna

Here’s a delicious and crowd-pleasing recipe for Walking Taco Casserole (also called Taco Lasagna) — all the flavors of a taco layered into a baked, cheesy, hearty dish. Super easy to make and great for weeknight dinners or potlucks!


🌮 Walking Taco Casserole / Taco Lasagna

Servings: 6–8

Cook Time: 25–30 mins
Total Time: ~45 mins


🧂 Ingredients:

  • 1 lb ground beef (or ground turkey)

  • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)

  • 1/2 cup water

  • 1 (10 oz) can Rotel (diced tomatoes with green chiles)

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 cup frozen or canned corn (drained)

  • 2 cups shredded Mexican cheese blend

  • 1 bag (9–10 oz) corn chips (Fritos or Doritos), slightly crushed

  • Optional toppings: sour cream, chopped lettuce, diced tomatoes, green onions, jalapeños, avocado


🥣 Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

  2. Brown the meat: In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.

  3. Add seasoning: Stir in taco seasoning and 1/2 cup water. Simmer for 2–3 minutes until thickened.

  4. Mix in extras: Add Rotel, black beans, and corn. Stir to combine. Cook for 2 more minutes.

  5. Layer the casserole:

    • Layer half of the crushed chips in the bottom of the dish.

    • Add the meat mixture on top.

    • Sprinkle 1 cup of cheese over the meat.

    • Add the remaining chips.

    • Top with remaining cheese.

  6. Bake for 20–25 minutes, or until cheese is melted and bubbly.

  7. Top & serve: Add your favorite toppings just before serving. Scoop and serve hot!


🔄 Variations:

  • Low-carb version: Swap chips for a layer of zucchini slices or low-carb tortillas.

  • Creamy twist: Add 1/2 cup sour cream or cream cheese to the meat mixture.

  • Extra spicy: Use spicy Rotel, hot taco seasoning, or spicy chips.
