Walking Taco Casserole

Here’s a simple and delicious recipe for a Walking Taco Casserole!

Ingredients:

  • 1 lb ground beef (or turkey)
  • 1 medium onion, diced
  • 1 packet taco seasoning mix (or homemade)
  • 1 can (15 oz) of black beans or kidney beans, drained and rinsed
  • 1 cup corn kernels (frozen or canned)
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel), drained
  • 1 cup salsa (your choice of mild or spicy)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (or a Mexican blend)
  • 1 bag (10-12 oz) of tortilla chips (crushed)
  • Optional toppings: lettuce, diced tomatoes, jalapeños, sliced olives, or additional cheese

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Cook the beef: In a large skillet, heat a tablespoon of oil over medium heat. Add the ground beef and diced onion, cooking until the beef is browned and the onion is softened. Drain excess fat if needed.
  3. Season the beef: Add the taco seasoning mix to the beef and onion, and follow the instructions on the packet (usually adding a bit of water and stirring). Once the seasoning is incorporated, add the beans, corn, and diced tomatoes with green chilies. Stir to combine and let it simmer for about 5 minutes.
  4. Assemble the casserole: In a greased 9×13-inch baking dish, spread a layer of the crushed tortilla chips (about half the bag). Then, spoon the beef mixture over the chips evenly. Spread the sour cream on top, followed by the salsa.
  5. Top with cheese: Sprinkle the shredded cheddar cheese over the entire casserole, making sure it’s evenly covered.
  6. Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Garnish and serve: Once out of the oven, let it cool slightly. Add your desired toppings like shredded lettuce, diced tomatoes, jalapeños, or more cheese.
  8. Serve: Scoop out portions of the casserole onto plates, and enjoy your delicious Walking Taco Casserole!

This casserole is perfect for a weeknight dinner or a party, and it’s great for customizing with your favorite taco toppings. Enjoy!
