Wagamama Crispy Chicken Sambal Fry

The Crispy Chicken Sambal Fry from Wagamama is a flavorful dish featuring crispy chicken coated in a spicy sambal sauce. Here’s a recipe to recreate it at home:

Ingredients:

For the crispy chicken:

  • 2 chicken breasts (or thighs), boneless and skinless
  • 1 cup plain flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 egg
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying

For the sambal sauce:

  • 2 tbsp vegetable oil
  • 1 red onion, finely chopped
  • 2 cloves garlic, minced
  • 2-3 red chilies, finely chopped (adjust to heat preference)
  • 2 tbsp sambal oelek (or any chili paste)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar (or white vinegar)
  • 1 tbsp sugar
  • 1 tbsp lime juice
  • 2 tbsp water (to adjust consistency)

Garnishes:

  • Fresh cilantro, chopped
  • Lime wedges
  • Sliced chili (optional)

Instructions:

  1. Prepare the chicken:
    • Slice the chicken breasts into strips or bite-sized pieces.
    • In a bowl, combine flour, paprika, garlic powder, onion powder, salt, and pepper.
    • Beat the egg in a separate bowl.
    • In a third bowl, place the panko breadcrumbs.
  2. Coat the chicken:
    • Dredge each piece of chicken in the flour mixture, dip it in the beaten egg, and then coat it with the panko breadcrumbs.
    • Set the coated chicken aside.
  3. Fry the chicken:
    • Heat vegetable oil in a frying pan over medium-high heat.
    • Fry the chicken in batches, cooking for about 4-5 minutes on each side or until golden and crispy.
    • Remove from the oil and place on paper towels to drain excess oil.
  4. Make the sambal sauce:
    • In a separate pan, heat 2 tablespoons of vegetable oil over medium heat.
    • Add the chopped onion and garlic and sauté for 2-3 minutes until softened.
    • Add the chopped chilies and cook for another 1-2 minutes.
    • Stir in the sambal oelek, soy sauce, vinegar, sugar, lime juice, and water. Cook for 3-4 minutes until the sauce thickens slightly.
  5. Toss the chicken in the sambal sauce:
    • Once the sauce has reached your desired consistency, toss the crispy chicken pieces in the sambal sauce, ensuring they’re well-coated.
  6. Serve:
    • Plate the crispy chicken sambal fry and garnish with chopped cilantro, lime wedges, and sliced chili if desired.
    • Serve immediately for the best texture!

Tips:

  • If you want to make the dish spicier, feel free to add extra chili paste or fresh chilies.
  • You can also serve this dish with steamed rice or noodles for a complete meal.
