Vintage Oven-Baked Peach Cobbler

Ingredients:

For the Peach Filling:
  • 4 cups fresh or frozen peaches (sliced)
  • 1/2 cup granulated sugar (more or less to taste depending on the sweetness of the peaches)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch (to thicken)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (optional)
  • 1 tsp vanilla extract
For the Cobbler Topping:
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup whole milk (or buttermilk for a richer flavor)
  • 1/2 tsp vanilla extract
Optional:
  • A sprinkle of cinnamon sugar for topping

Directions:

Prepare the Peach Filling:

  1. Preheat your oven: Set your oven to 350°F (175°C).
  2. Make the peach filling:
    • In a medium saucepan, combine the sliced peaches, sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Stir gently to combine.
    • Cook the mixture over medium heat, stirring frequently, until the peaches release their juices and the mixture begins to thicken (about 5-7 minutes).
    • Once thickened, remove from heat and stir in the vanilla extract.
  3. Transfer the filling:
    • Pour the peach mixture into a greased 9×9-inch baking dish (or any similar-sized dish you have). Set aside while you prepare the topping.

Make the Cobbler Topping:

  1. Mix dry ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Cut in the butter:
    • Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs with pea-sized bits of butter.
  3. Add the wet ingredients:
    • Pour in the milk and vanilla extract. Stir gently until just combined; be careful not to overmix.

Assemble and Bake:

  1. Top the peaches:
    • Drop spoonfuls of the biscuit batter over the peach filling. It’s okay if it doesn’t fully cover the peaches; the biscuit topping will spread as it bakes.
  2. Optional finishing touch:
    • If you like, sprinkle a little cinnamon sugar over the top of the batter for a sweet, crispy finish.
  3. Bake:
    • Place the cobbler in the preheated oven and bake for 35-45 minutes, or until the topping is golden brown and the filling is bubbling around the edges.

Serve:

  • Let the cobbler cool for a few minutes before serving. It’s delicious on its own or topped with a scoop of vanilla ice cream or a dollop of whipped cream.
