Here’s a tasty and versatile Vegetable Spread recipe — perfect for crackers, sandwiches, or as a dip. It’s fresh, flavorful, and packed with veggies!


🥕 Fresh Vegetable Spread

📝 Ingredients:

  • 1 cup finely chopped mixed vegetables (e.g., bell peppers, carrots, cucumbers, celery)

  • ½ cup cream cheese (softened) or Greek yogurt for a lighter option

  • 2 tbsp mayonnaise (optional, for creaminess)

  • 1 small onion or 2 green onions, finely chopped

  • 1 clove garlic, minced

  • 1 tbsp fresh herbs (parsley, dill, chives), finely chopped

  • 1 tsp lemon juice

  • Salt and pepper, to taste


👩‍🍳 Instructions:

  1. In a bowl, combine cream cheese (or yogurt) and mayonnaise until smooth.

  2. Stir in chopped vegetables, onion, garlic, and herbs.

  3. Add lemon juice, salt, and pepper; mix well.

  4. Chill for at least 30 minutes to let flavors meld.

  5. Serve as a spread on crackers, sandwiches, or fresh bread.


Variations:

  • Add roasted veggies for a smoky flavor.

  • Mix in some shredded cheese or nuts for texture.

  • Use hummus instead of cream cheese for a vegan twist.
