🥕 Crispy Vegetable Fritters
Ingredients:

2 cups grated vegetables (e.g., zucchini, carrot, potato, sweet potato, corn, spinach, or onion)

¼ cup chopped scallions or red onion

2 garlic cloves, minced

2 large eggs

½ cup (60g) all-purpose flour (or chickpea flour for gluten-free)

¼ cup grated Parmesan or crumbled feta (optional)

Salt and pepper to taste

½ tsp paprika or chili flakes (optional)

2–3 tbsp fresh herbs (parsley, cilantro, dill — optional)

Oil for pan-frying (vegetable or olive oil)
Instructions:

Prep the Veggies:
Grate veggies and place in a clean kitchen towel. Squeeze out as much moisture as possible—especially important for zucchini or potato. -
Make the Batter:
In a bowl, mix veggies, scallions, garlic, eggs, flour, cheese (if using), and seasonings until well combined. The mixture should be thick and hold together. If too wet, add a bit more flour. -
Fry the Fritters:
Heat a nonstick skillet over medium heat with a bit of oil. Drop heaping spoonfuls of the mixture into the pan, flattening slightly. Cook for 3–4 minutes per side or until golden brown and cooked through. -
Drain and Serve:
Transfer to a paper towel–lined plate to drain excess oil. Serve warm.

Yogurt-Garlic Sauce: Mix plain yogurt, a squeeze of lemon juice, minced garlic, salt, and chopped herbs.
