Eggless Vanilla Custard Powder Cookies
Ingredients:
-
1/2 cup (113g) unsalted butter (softened)
-
1/4 cup powdered sugar (icing sugar)
-
1/4 cup custard powder (vanilla flavor)
-
3/4 cup all-purpose flour (maida)
-
1/2 tsp vanilla extract (optional for extra flavor)
-
A pinch of salt
Instructions:
-
Preheat your oven to 160°C (320°F). Line a baking tray with parchment paper.
-
In a mixing bowl, cream together softened butter and powdered sugar until light and fluffy.
-
Add the custard powder, vanilla extract, and mix well.
-
Sift in the all-purpose flour and a pinch of salt. Mix to form a soft dough. If it’s too dry, add 1-2 tsp of milk; if too sticky, a little flour.
-
Roll the dough into small balls (about 1 tbsp size), flatten gently with your fingers or a fork.
-
Place on the tray, leaving space between cookies. Optional: Use a fork to press a criss-cross pattern on top.
-
Bake for 12–15 minutes, or until the edges just begin to turn golden.
-
Cool on the tray for 5 minutes, then transfer to a wire rack.
Tips:
-
Don’t overbake — they’ll firm up as they cool.
-
Store in an airtight container for up to a week.
-
You can add a bit of cardamom or nutmeg for a twist.
