Ingredients

3 cups (375g) all-purpose flour

1 cup warm water (about 110Β°F / 43Β°C)

2 ΒΌ tsp (1 packet) instant or active dry yeast

1 tbsp sugar

1 tsp salt
-
3 tbsp plain yogurt (or Greek yogurt)

2 tbsp olive oil (plus more for cooking/brushing)
Instructions
1. Activate Yeast

Mix warm water, sugar, and yeast in a bowl. Let sit for 5β10 minutes until frothy (if using active dry yeast).
2. Make the Dough

In a large bowl, combine flour and salt.

Add the yeast mixture, yogurt, and olive oil.

Mix and knead the dough for 8β10 minutes until smooth and elastic (or use a mixer with a dough hook for 5β6 min).
3. First Rise

Cover and let the dough rise in a warm place for 1 hour or until doubled in size.
4. Shape the Bread

Divide dough into 4β6 pieces. Roll each into a ball, then flatten into rounds (about 1/4 inch thick).

Cover with a towel and let rest for 10 minutes.
5. Cook

Heat a skillet or griddle over medium heat.

Lightly oil the surface and cook each flatbread 2β3 minutes per side until puffed and golden brown.

Optionally, brush warm bread with olive oil or melted butter.
