“Tropical Pineapple Delight Dessert”

Tropical Pineapple Delight Dessert Recipe

Ingredients:

  • 1 can (20 oz) crushed pineapple in juice (drained)
  • 1 cup heavy cream
  • 1/2 cup sweetened condensed milk
  • 1/2 cup shredded coconut (unsweetened or sweetened)
  • 1/2 cup crushed graham crackers (or digestive biscuits)
  • 1/4 cup melted butter
  • 1/4 cup chopped macadamia nuts or pecans (optional, for extra crunch)
  • 1/2 tsp vanilla extract
  • Maraschino cherries (for garnish, optional)

Instructions:

  1. Prepare the Crust:
    • In a medium bowl, mix the crushed graham crackers (or biscuits) with the melted butter. Stir until everything is well combined and the mixture sticks together.
    • Press this mixture into the bottom of a greased 9×9-inch baking dish or pie dish to form the crust. Use the back of a spoon to evenly press it down.
    • Place the crust in the fridge while you prepare the filling to help it firm up.
  2. Make the Pineapple Filling:
    • In a large bowl, combine the drained crushed pineapple, shredded coconut, and sweetened condensed milk. Stir until everything is mixed evenly.
    • In a separate bowl, beat the heavy cream with the vanilla extract until stiff peaks form (whipped cream).
    • Gently fold the whipped cream into the pineapple mixture. Be careful not to deflate the whipped cream too much—just fold until fully incorporated.
  3. Assemble the Dessert:
    • Remove the graham cracker crust from the fridge and spread the pineapple mixture evenly over the crust. Use a spatula to smooth the top.
  4. Garnish and Chill:
    • Sprinkle the chopped macadamia nuts or pecans on top of the dessert for added crunch. You can also add a few maraschino cherries for a fun pop of color and extra sweetness.
    • Refrigerate the dessert for at least 3-4 hours (or overnight) to let it firm up and allow the flavors to meld.
  5. Serve:
    • Once chilled, cut into squares or slices and serve this cool, creamy, and tropical treat.

Optional Variations:

  • For a tropical twist: Add small chunks of mango, banana, or papaya to the filling for more tropical flavor.
  • For a lighter version: Swap the sweetened condensed milk for Greek yogurt or a non-dairy yogurt for a healthier version.
