π Peach Filling:

2 large cans (29 oz each) sliced peaches in syrup, drained (or 6 cups fresh or frozen peaches)

1 cup granulated sugar

1/2 cup brown sugar

1/4 cup melted butter
-
2 tbsp cornstarch
-
1 tbsp lemon juice
-
1 tsp vanilla extract
-
1 Β½ tsp ground cinnamon
-
1/4 tsp ground nutmeg

2 boxes (14.1 oz each) refrigerated pie crusts (4 crusts total)
OR use homemade pie dough β enough for 2 double crusts -
1 egg + 1 tbsp water (for egg wash)

Sugar for sprinkling (optional)
πͺ Instructions:
1. Preheat Oven:

Preheat oven to 375Β°F (190Β°C). Grease a 9×13-inch baking dish.
2. Make the Peach Filling:

In a large saucepan, combine peaches, sugars, cornstarch, melted butter, lemon juice, cinnamon, nutmeg, and vanilla.

Simmer over medium heat for 8β10 minutes until bubbly and thickened slightly. Remove from heat.
3. Layer the Crusts:

Bottom Crust:
Roll out one pie crust and press it into the bottom of the baking dish. Bake for 10β12 minutes, until lightly golden. (This keeps the bottom from getting soggy.) -
Middle Crust:
Roll out a second crust and cut it into strips or rough pieces. Set aside. -
Top Crust:
Use the remaining 1β2 crusts for the top layer β you can do a full cover, lattice, or patchwork.
4. Assemble the Cobbler:

Pour half of the peach filling over the baked bottom crust.

Layer the middle crust strips over the filling.

Add the rest of the peach filling.

Cover with the top crust, crimping edges if using a full sheet. Cut slits for steam, or arrange lattice or pieces.

Brush top with egg wash and sprinkle with sugar if desired.
5. Bake:

Bake at 375Β°F for 40β50 minutes, or until golden brown and bubbling.

Cover loosely with foil in the last 15 minutes if the crust browns too quickly.
6. Cool & Serve:

Let rest at least 15β20 minutes before serving.
