Tomato Soup with Cheese and Onion Toast

Tomato soup with cheese and onion toast sounds like a cozy, comforting meal! It’s perfect for a chilly day or when you just want something easy and delicious. Here’s a quick recipe for both:

Tomato Soup:

Ingredients:

  • 4 large ripe tomatoes (or 1 can of whole tomatoes)

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 2 cups vegetable broth (or chicken broth)

  • 1 tbsp olive oil or butter

  • 1 tsp sugar (optional, to balance acidity)

  • Salt and pepper, to taste

  • Fresh basil or dried herbs (optional)

Instructions:

  1. Heat olive oil or butter in a large pot over medium heat. Add the chopped onions and sauté until softened and translucent (about 5 minutes).

  2. Add the garlic and cook for another minute, until fragrant.

  3. If using fresh tomatoes, chop them and add them to the pot. If using canned tomatoes, pour them in (along with their juices).

  4. Add the vegetable broth and sugar (if using). Stir to combine and bring to a simmer. Let it cook for about 15-20 minutes, stirring occasionally, until the tomatoes break down and the flavors meld.

  5. Use an immersion blender to blend the soup until smooth (or blend in batches in a regular blender).

  6. Season with salt and pepper to taste. Add fresh basil or dried herbs if you like.

  7. Serve hot and enjoy!


Cheese and Onion Toast:

Ingredients:

  • 4 slices of your favorite bread (sourdough, white, whole wheat, etc.)

  • 1 medium onion, thinly sliced

  • 1 tbsp butter

  • 1 cup grated cheese (cheddar is classic, but feel free to mix it up with mozzarella, gouda, or any cheese you prefer)

  • Salt and pepper, to taste

Instructions:

  1. In a small pan, melt the butter over medium heat. Add the sliced onion and cook, stirring occasionally, until soft and caramelized, about 10-15 minutes. Season with salt and pepper.

  2. While the onions are cooking, preheat your broiler or toaster oven.

  3. Toast the bread slices lightly, just until golden on both sides.

  4. Once the onions are ready, pile them onto the toasted bread.

  5. Sprinkle a generous amount of grated cheese over the onions and place the toast under the broiler for 1-2 minutes, or until the cheese is melted and bubbly.

  6. Remove from the oven, cut into halves or quarters, and serve with your fresh tomato soup.
