Tomato Soup

Here’s a classic and comforting Tomato Soup recipe — simple, flavorful, and easy to make from scratch.


🍅 Homemade Tomato Soup

Ingredients (Serves 4):

  • 2 tbsp olive oil or butter

  • 1 medium onion, chopped

  • 2–3 cloves garlic, minced

  • 1 tbsp tomato paste

  • 1 can (28 oz / 800g) whole peeled tomatoes (or use fresh ripe tomatoes, see tips)

  • 2 cups (500 ml) vegetable broth (or chicken broth)

  • 1 tsp sugar (optional, balances acidity)

  • Salt & freshly ground black pepper, to taste

  • 1/4 cup heavy cream or milk (optional, for creaminess)

  • Fresh basil leaves or parsley for garnish


Instructions:

  1. Sauté the aromatics:
    In a large pot, heat olive oil over medium heat. Add chopped onion and cook until soft (about 5 minutes). Add garlic and cook for 1 more minute.

  2. Add tomato paste:
    Stir in the tomato paste and cook for 1–2 minutes to deepen the flavor.

  3. Add tomatoes and broth:
    Pour in the canned tomatoes (with juice), breaking them up with a spoon. Add broth and sugar. Season with salt and pepper.

  4. Simmer:
    Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes, stirring occasionally.

  5. Blend:
    Use an immersion blender to purée the soup until smooth (or transfer in batches to a blender — be careful, it’s hot).

  6. Finish:
    Stir in cream or milk, if using. Taste and adjust seasoning.

  7. Serve hot, garnished with fresh basil, croutons, or a swirl of cream.


🍞 Optional Serving Ideas:

  • With a grilled cheese sandwich

  • Topped with croutons or parmesan

  • Drizzle with olive oil or pesto
