πŸ“ Ingredients (Serves 4–6)

  • 2 large tomatoes, chopped or sliced (or 1 pint cherry tomatoes, halved)

  • 1 large cucumber, peeled and sliced or chopped

  • 1/2 red onion, thinly sliced

  • 2 tablespoons olive oil

  • 1–2 tablespoons vinegar (red wine vinegar or apple cider vinegar)

  • Salt and black pepper, to taste

  • 1/2 teaspoon dried oregano (optional)

  • 1 teaspoon sugar or honey (optional, balances acidity)

  • Optional: chopped fresh parsley, dill, or basil for garnish

  1. Prep the Veggies

    • Slice tomatoes, cucumber, and onion. You can peel the cucumber if the skin is tough.

  2. Make the Dressing

    • In a small bowl, whisk together:

      • Olive oil

      • Vinegar

      • Salt, pepper

      • Oregano and sugar/honey (if using)

  3. Toss & Chill

    • In a large bowl, combine the vegetables.

    • Pour dressing over the top and toss gently to coat.

    • Let sit for at least 15–30 minutes in the fridge for the flavors to meld.

  4. Serve

    • Serve cold or at room temperature. Garnish with fresh herbs if desired.
