Ah, the magic of Gözleme — a traditional Turkish flatbread that’s rustic, comforting, and surprisingly easy to make. It’s a stuffed, pan-cooked flatbread that can be filled with a variety of savory ingredients like spinach, cheese, potatoes, or minced meat. The dough is soft and stretchy, and when cooked, it turns golden and crispy on the outside with a warm, flavorful filling inside.

🫓✨ The Magic of Gözleme (Turkish Stuffed Flatbread)

🧾 Simple Dough (No Yeast):

  • 2 cups all-purpose flour

  • ½ tsp salt

  • ¾ cup warm water (adjust as needed)

  • 1 tbsp olive oil


🧄 Popular Fillings (Choose or Mix):

1. Spinach & Feta (Traditional Veggie Option)

  • 1–2 cups fresh spinach, chopped and lightly wilted

  • ½ cup crumbled feta cheese

  • Optional: chopped onion, mint, or parsley

2. Potato & Cheese

  • 1 cup mashed potatoes

  • ½ cup grated cheese (mozzarella, cheddar, or Turkish kasar)

  • Optional: paprika or chili flakes

3. Minced Meat & Onion

  • 200g ground beef or lamb

  • 1 small onion, finely chopped

  • 1 tbsp tomato paste

  • Salt, pepper, cumin, paprika


👨‍🍳 How to Make Gözleme:

1. Make the Dough:

  • Mix flour and salt in a bowl. Add warm water and oil gradually, mixing until a soft dough forms.

  • Knead 4–5 minutes until smooth and elastic.

  • Cover and rest for 20–30 minutes.

2. Prepare Filling:

  • Cook meat filling in a pan until fully cooked.

  • Mix raw fillings (like spinach and cheese) in a bowl and season to taste.

3. Roll and Fill:

  • Divide dough into 4 pieces.

  • Roll each piece out very thinly on a floured surface (about 10–12″ circles or squares).

  • Place filling on one half, then fold over like a calzone or envelope. Press edges to seal.

4. Cook the Gözleme:

  • Heat a pan (nonstick or cast iron) over medium-high heat.

  • Cook each Gözleme for 2–3 minutes per side, until golden with brown spots.

  • Brush lightly with oil or melted butter while hot for extra flavor.


🌿 Serve Hot With:

  • Lemon wedges (to squeeze over the filling — traditional!)

  • A bowl of plain yogurt or tzatziki

  • Fresh herb salad or pickled veggies
