  • 4 boneless, skinless chicken breasts (or thighs), cubed or left whole

  • 1 cup pineapple chunks (fresh or canned, drained)

  • 1 red bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1/2 red onion, thinly sliced

  • 2 cups broccoli florets or snow peas (optional)

  • 1/2 cup teriyaki sauce (store-bought or homemade)

  • 1 tbsp olive oil

  • Salt & pepper to taste

  • Optional: cooked rice or quinoa for serving

  • Optional garnish: green onions, sesame seeds, lime wedges

1. Prep the Foil:

  • Tear off 4 large sheets of heavy-duty foil (about 12 x 16 inches). Spray or brush lightly with oil.

2. Assemble the Packets:

  • In the center of each foil sheet, layer:

    • Chicken (season with salt & pepper)

    • Pineapple chunks

    • Bell peppers, onion, and other veggies if using

  • Drizzle 2–3 tablespoons teriyaki sauce and a little olive oil over each packet.

3. Seal the Packets:

  • Bring long sides of the foil up and over the mixture, fold together tightly, then fold in the ends to seal into a packet.

4. Cook the Packets:

  • Grill: Place on medium heat for 20–25 minutes, flipping halfway.

  • Oven: Bake at 400Β°F (200Β°C) for 25 minutes on a baking sheet.

  • Campfire: Cook over hot coals or a grate for 15–20 minutes, turning occasionally.

5. Serve:

  • Carefully open packets (steam will be hot!). Serve as-is or spoon over rice or quinoa.

  • Garnish with green onions, sesame seeds, or a squeeze of lime.

  • Make it spicy: Add a few dashes of sriracha or red pepper flakes.

  • No foil? Use parchment inside foil or bake ingredients in a covered baking dish.

  • Marinate ahead: For more flavor, marinate chicken in teriyaki sauce for 30 min to overnight before assembling packets.
