🍽️ Tender Chicken Delight
Ingredients:
-
4 boneless, skinless chicken breasts (or thighs for more flavor)
-
Salt and pepper to taste
-
1 tsp garlic powder
-
1 tsp onion powder
-
1 tbsp olive oil or butter
-
1 (10.5 oz) can cream of chicken soup
-
½ cup sour cream
-
½ cup chicken broth
-
1 tsp dried thyme or Italian seasoning
-
1 cup shredded cheddar or Swiss cheese (optional)
-
1 cup crushed buttery crackers (like Ritz) or breadcrumbs
-
2 tbsp melted butter
🧑🍳 Instructions:
1. Prep the chicken:
-
Preheat oven to 375°F (190°C).
-
Lightly season chicken with salt, pepper, garlic powder, and onion powder.
-
In a skillet over medium-high heat, sear chicken in olive oil or butter for 2–3 minutes per side to lock in juices (optional, but adds flavor).
2. Make the creamy sauce:
-
In a bowl, mix cream of chicken soup, sour cream, chicken broth, and thyme or seasoning blend until smooth.
3. Assemble the dish:
-
Place chicken in a greased 9×13 baking dish.
-
Pour the creamy mixture over the chicken.
-
If using cheese, sprinkle it evenly over the sauce.
-
Mix cracker crumbs or breadcrumbs with melted butter, then sprinkle on top.
4. Bake:
-
Cover with foil and bake for 25 minutes.
-
Uncover and bake another 10–15 minutes, until chicken is cooked through (internal temp 165°F / 74°C) and topping is golden and crispy.
5. Serve:
-
Let rest 5 minutes.
-
Serve with rice, mashed potatoes, or buttered noodles, and a veggie side like green beans or broccoli.
📝 Tips:
-
Want more kick? Add a pinch of cayenne or a spoonful of Dijon mustard to the sauce.
-
Use rotisserie chicken and turn this into a casserole-style dish with cooked pasta.
-
Make it low-carb: swap out crackers for crushed pork rinds or skip the topping entirely.
