Ingredients:

  • 1 cup crushed buttery crackers (like Ritz) or breadcrumbs

  • 2 tbsp melted butter

1. Prep the chicken:

  • Preheat oven to 375°F (190°C).

  • Lightly season chicken with salt, pepper, garlic powder, and onion powder.

  • In a skillet over medium-high heat, sear chicken in olive oil or butter for 2–3 minutes per side to lock in juices (optional, but adds flavor).

2. Make the creamy sauce:

  • In a bowl, mix cream of chicken soup, sour cream, chicken broth, and thyme or seasoning blend until smooth.

3. Assemble the dish:

  • Place chicken in a greased 9×13 baking dish.

  • Pour the creamy mixture over the chicken.

  • If using cheese, sprinkle it evenly over the sauce.

  • Mix cracker crumbs or breadcrumbs with melted butter, then sprinkle on top.

4. Bake:

  • Cover with foil and bake for 25 minutes.

  • Uncover and bake another 10–15 minutes, until chicken is cooked through (internal temp 165°F / 74°C) and topping is golden and crispy.

5. Serve:

  • Let rest 5 minutes.

  • Serve with rice, mashed potatoes, or buttered noodles, and a veggie side like green beans or broccoli.
