🧂 Ingredients:

  • 1 lb breakfast sausage (or bacon or ham), cooked and crumbled

  • 1 bag (32 oz) frozen tater tots

  • 8 large eggs

  • 1 cup milk (whole or 2%)

  • 1 ½ cups shredded cheddar cheese (plus extra for topping)

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt & pepper, to taste

  • Optional: chopped green onions, bell peppers, or spinach for added flavor


🔥 Instructions:

1. Preheat oven to 350°F (175°C).

2. Prepare meat:

  • In a skillet over medium heat, cook sausage until browned and fully cooked. Drain excess grease.

3. Assemble the casserole:

  • Lightly grease a 9×13-inch baking dish.

  • Spread the cooked sausage evenly across the bottom.

  • Optional: Add chopped veggies on top of the meat.

  • Sprinkle 1½ cups of shredded cheese over the sausage.

  • Arrange frozen tater tots in a single layer over the cheese.

4. Mix eggs:

  • In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper.

  • Pour the egg mixture evenly over the casserole.

5. Bake:

  • Bake uncovered for 45–50 minutes, or until the eggs are set and the tater tots are golden and crispy.

6. Top with cheese (optional):

  • Sprinkle extra cheese over the top during the last 5–10 minutes of baking.

7. Cool slightly and serve:

  • Let rest for 5 minutes before slicing. Garnish with chopped green onions or salsa if desired.
