Tandoori Chicken

Tandoori Chicken is a classic Indian dish made by marinating chicken in a mixture of yogurt and spices, then cooking it in a tandoor (a traditional clay oven) or a grill/oven for a smoky flavor and charred edges.

🔥 Basic Tandoori Chicken Recipe

Ingredients:

  • 1 kg chicken (bone-in, skinless, cut into pieces)

  • 1 cup plain yogurt

  • 2 tbsp lemon juice

  • 1.5 tbsp ginger-garlic paste

  • 2 tsp Kashmiri red chili powder (for color, not heat)

  • 1 tsp turmeric

  • 1 tsp ground cumin

  • 1 tsp garam masala

  • 1 tsp ground coriander

  • 2 tbsp vegetable oil

  • Salt to taste

  • Optional: red/orange food coloring for that signature look

Instructions:

  1. Prep Chicken: Make deep slits in the chicken pieces to help the marinade penetrate.

  2. Marinate:

    • Mix all ingredients (except chicken) into a smooth marinade.

    • Coat the chicken thoroughly. Let it marinate at least 6 hours, preferably overnight in the fridge.

  3. Cook:

    • Oven: Preheat to 220°C (425°F). Bake on a rack over a tray for 25–30 minutes, flipping halfway.

    • Grill: Grill over medium-high heat until charred and cooked through.

    • Pan: Sear on high heat, then lower flame and cook through with lid on.

  4. Serve:

    • Garnish with onion rings, lemon wedges, and fresh coriander.

    • Pair with naan, rice, or salad.
