🌮🧀 Taco Beef Cornbread Casserole
🔹 Ingredients:
For the beef layer:

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced
-
1 packet taco seasoning (or 2 tbsp homemade)

½ cup water
-
1 cup canned corn, drained
-
1 cup black beans, drained & rinsed (optional)

1 cup salsa or diced tomatoes
For the cornbread topping:

1 box cornbread mix (e.g. Jiffy, ~8.5 oz)

1 egg
-
⅓ cup milk
-
1 cup shredded cheddar cheese (or Mexican blend)
-
1 small can (4 oz) diced green chiles (optional)
🔥 Instructions:
1. Preheat oven to 375°F (190°C).
Grease a 9×9-inch or 7×11-inch baking dish.
2. Cook the beef:

In a large skillet, cook ground beef and onions over medium heat until browned. Drain excess fat.

Add garlic and cook 1 minute.

Stir in taco seasoning, water, corn, black beans (if using), and salsa. Simmer for 5–7 minutes until thickened.
3. Make the cornbread topping:

In a bowl, combine cornbread mix, egg, and milk. Stir until just combined.

Fold in shredded cheese and green chiles.
4. Assemble the casserole:

Pour beef mixture into the prepared dish.

Spoon and gently spread the cornbread batter evenly over the top.
5. Bake:

Bake uncovered for 25–30 minutes, or until cornbread is golden and cooked through (toothpick test the center).
