🍠 Sweet Potato Rocambole with Minced Meat

Ingredients
For the Sweet Potato Dough:

2 large sweet potatoes (about 500g), peeled and boiled

1 egg

3 tbsp grated Parmesan cheese

4 tbsp all-purpose flour (plus extra if needed)

Salt and pepper to taste

A pinch of nutmeg (optional)
For the Meat Filling:

2 tbsp olive oil
-
1 small onion, finely chopped
-
2 garlic cloves, minced
-
300g (10 oz) ground beef or ground turkey
-
1 small tomato, chopped (or 2 tbsp tomato paste)

1/2 bell pepper, diced (optional)
-
Salt, pepper, smoked paprika, and cumin to taste

2 tbsp chopped parsley or green onions
Optional:

Grated cheese for topping

Egg wash for brushing (1 beaten egg)
Instructions
1. Prepare the Dough:

Mash the boiled sweet potatoes in a bowl until smooth.

Add the egg, Parmesan, salt, pepper, and nutmeg (if using).

Mix in the flour gradually until a soft, slightly sticky dough forms. Add more flour if it’s too wet to roll.

Set aside to cool slightly.
2. Prepare the Filling:

Heat olive oil in a skillet. Sauté onion and garlic until soft.

Add the ground meat, cook until browned.

Stir in tomato, bell pepper (if using), and spices.

Cook until liquid evaporates and mixture is thick. Finish with parsley. Let it cool.
3. Assemble the Rocambole:

Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper and grease it.

On the paper, spread the sweet potato dough into a rectangle about 1–1.5 cm thick.

Spread the meat filling evenly, leaving a border.

Carefully roll it up like a jelly roll, using the parchment paper to help.

Place seam-side down. Brush with egg wash and sprinkle cheese if desired.
4. Bake:

Bake for 25–30 minutes, or until golden and firm.

Let it rest for 10 minutes before slicing.
