🍚 Super Easy Air Fryer Fried Rice

Ingredients:

  • 2 cups cold, cooked rice (day-old rice works best)

  • 1 cup mixed frozen veggies (peas, carrots, corn, etc.)

  • 2 eggs (optional, scrambled or beaten raw into the rice)

  • 2 tbsp soy sauce

  • 1 tbsp sesame oil (or vegetable oil)

  • ½ tsp garlic powder (optional)

  • Salt & pepper, to taste

  • Optional: chopped green onions, cooked shrimp, chicken, or tofu


Instructions:

  1. Preheat the Air Fryer:
    Set it to 350°F (175°C) for a few minutes while you prep.

  2. Mix It All Together:
    In a large bowl, combine:

    • Cold rice

    • Frozen veggies

    • Soy sauce

    • Oil

    • Garlic powder (if using)

    • Scrambled eggs (either pre-cooked or raw — see tip below)

    Mix well to coat the rice evenly.

  3. Air Fry:

    • Transfer the mixture into a foil-lined or air fryer-safe pan (so the rice doesn’t fall through the basket).

    • Spread the rice into an even layer.

    • Air fry at 350°F (175°C) for 10–12 minutes, stirring halfway through.

    • If using raw egg in the mix, make sure to stir a couple times for even cooking.

  4. Add Extras (optional):

    • Add cooked proteins (like chicken, shrimp, or tofu) in the last 5 minutes.

    • Sprinkle with green onions before serving.


Tips:

  • Day-old rice is key — fresh rice gets mushy. If you’re using freshly cooked rice, let it cool uncovered in the fridge for 30+ minutes first.

  • Want crispier rice? Air fry 2–3 extra minutes.

  • Want to cook the egg separately? Scramble it in a pan or microwave and mix it in at the end.

  • Add a dash of hoisin or oyster sauce for extra depth.
