Absolutely! Here’s a hearty and comforting Stuffed Pepper Soup recipe — it has all the classic flavors of stuffed bell peppers but in a cozy, one-pot soup form. Perfect for meal prep or a cold day.


🫑 Stuffed Pepper Soup

🧂 Ingredients

  • 1 lb ground beef (or Italian sausage or ground turkey)

  • 1 tbsp olive oil (if using lean meat)

  • 1 medium onion, chopped

  • 2–3 bell peppers, chopped (any color, green is classic)

  • 2 cloves garlic, minced

  • 1 can (15 oz) tomato sauce

  • 1 can (14.5 oz) diced tomatoes (with juice)

  • 3 cups beef broth (or chicken/vegetable broth)

  • 1 tbsp tomato paste (optional, for richness)

  • 1 tsp Italian seasoning

  • 1/2 tsp smoked paprika (optional)

  • Salt & black pepper, to taste

  • 3/4 cup uncooked white rice (or use already cooked rice)


👩‍🍳 Instructions

  1. Brown the Meat:

    • In a large pot or Dutch oven over medium heat, cook ground beef until browned.

    • Drain excess fat if needed. Set aside if you want to sauté veggies separately.

  2. Sauté Veggies:

    • Add olive oil if needed.

    • Cook onion and bell peppers until soft, about 5–6 minutes.

    • Add garlic and cook 30 seconds more.

  3. Add Tomatoes & Seasonings:

    • Stir in tomato paste (if using), tomato sauce, diced tomatoes, broth, and all seasonings.

  4. Add Rice & Simmer:

    • Stir in uncooked rice, bring to a boil, then reduce heat to low.

    • Cover and simmer 20–25 minutes until rice is tender.

    If using cooked rice, add it in the last 5 minutes to avoid mushiness.

  5. Taste & Adjust:

    • Add salt, pepper, or extra broth if needed (soup will thicken as it sits).


🧀 Optional Toppings:

  • Shredded cheddar or mozzarella cheese

  • Chopped fresh parsley

  • A dollop of sour cream

  • Crushed red pepper flakes for heat


🥖 Serve With:

  • Crusty bread

  • Side salad

  • Cornbread
