Stuffed Pepper Soup

Here’s a cozy, hearty recipe for Stuffed Pepper Soup—all the flavors of classic stuffed peppers, but in a comforting, easy-to-make bowl. It’s perfect for a chilly evening, meal prep, or family dinner.


🌶️ Stuffed Pepper Soup

🧺 Ingredients (Serves 4–6):

  • 1 lb (450g) ground beef or ground turkey

  • 1 tbsp olive oil

  • 1 yellow onion, diced

  • 2–3 bell peppers (red, green, or yellow), chopped

  • 3 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes, with juices

  • 1 can (8 oz) tomato sauce

  • 4 cups beef or vegetable broth

  • 1 tsp dried oregano

  • ½ tsp dried basil

  • 1 tbsp Worcestershire sauce (optional, for depth)

  • Salt and pepper, to taste

  • ¾ cup uncooked white or brown rice

  • Optional garnish: chopped parsley, shredded cheese, or red pepper flakes


🍲 Instructions:

  1. Brown the Meat:

    • In a large soup pot, heat olive oil over medium heat.

    • Add ground beef (or turkey) and cook until browned, breaking it up with a spoon.

    • Drain excess fat if needed.

  2. Sauté the Veggies:

    • Add onion and bell peppers. Cook 4–5 minutes until slightly softened.

    • Stir in garlic and cook 1 more minute.

  3. Add Liquids & Seasoning:

    • Stir in diced tomatoes, tomato sauce, broth, oregano, basil, Worcestershire, salt, and pepper.

  4. Add Rice & Simmer:

    • Stir in uncooked rice.

    • Bring to a boil, then reduce to a simmer and cover.

    • Cook for 20–25 minutes, or until rice is tender, stirring occasionally.

  5. Taste & Serve:

    • Adjust salt and pepper if needed.

    • Ladle into bowls and top with shredded cheese or herbs if desired.


🧄 Grandma Mari’s Comforting Touch:

  • She’d sometimes add a splash of cream or a handful of chopped spinach at the end.

  • Use leftover cooked rice: Add it in the last 5 minutes to avoid mushiness.

  • Pair it with a slice of buttered crusty bread or cornbread.
