Strawberry Fool

Here’s a light, sweet, and refreshingly simple dessert:


๐Ÿ“ Strawberry Fool

๐Ÿ•’ Time: 15 minutes (plus chilling)

๐Ÿฝ๏ธ Serves: 4

๐ŸŒฑ Great for: Spring/Summer, last-minute desserts


๐Ÿฅฃ Ingredients:

  • 1 lb (450g) fresh strawberries, hulled

  • 1/4 cup (50g) granulated sugar (adjust to taste)

  • 1 tsp vanilla extract or a splash of lemon juice (optional)

  • 1 cup (240ml) heavy whipping cream

  • 1 tbsp powdered sugar (optional, for the cream)


๐Ÿ”ช Instructions:

  1. Prepare the Strawberries:

    • Place strawberries and granulated sugar in a blender or food processor.

    • Pulse until pureed (leave a few small chunks for texture if desired).

    • Optional: Add vanilla or lemon juice for brightness.

    • Chill the puree for 15โ€“30 minutes if time allows.

  2. Whip the Cream:

    • In a cold bowl, whip the heavy cream with powdered sugar (if using) until it forms soft peaks.

  3. Combine:

    • Gently fold the strawberry puree into the whipped cream.

    • Swirl lightly for a marbled look, or fully mix for an even pink color.

  4. Serve:

    • Spoon into serving glasses or bowls.

    • Garnish with sliced strawberries, mint, or crushed cookies if desired.

    • Serve immediately or chill for up to 2 hours.


๐Ÿ“ Variations:

  • Use raspberries or mixed berries instead of strawberries.

  • Add crushed meringue for a mini Eton mess twist.

  • Layer with pound cake or biscuits for a quick trifle-style dessert.
