Steamed vegetable medley blackened catfish and lemon pepper catfish and Cajun shrimp.

This is a flavorful and satisfying combination of Steamed Vegetable Medley, Blackened Catfish, Lemon Pepper Catfish, and Cajun Shrimp. Each dish has a distinct and bold flavor that complements the others beautifully. Here’s a simple recipe to prepare all of them:

Steamed Vegetable Medley:

Ingredients:

  • 1 cup broccoli florets
  • 1 cup carrots (sliced)
  • 1 cup bell peppers (sliced)
  • 1/2 cup zucchini (sliced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon garlic powder (optional)
  • Fresh herbs (like parsley or thyme) for garnish

Instructions:

  1. Steam the Vegetables:
    • Bring a pot of water to a simmer and place a steamer basket over it. Add the broccoli, carrots, bell peppers, and zucchini to the basket.
    • Cover and steam for about 6-8 minutes, or until the vegetables are tender but still crisp.
  2. Season:
    • Drizzle olive oil over the steamed vegetables and toss gently to coat.
    • Season with salt, pepper, and garlic powder to taste. Garnish with fresh herbs if desired.

Blackened Catfish:

Ingredients:

  • 2 catfish fillets (or more depending on servings)
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon thyme
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1 tablespoon olive oil

Instructions:

  1. Make the Blackened Seasoning:
    • In a small bowl, mix paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and pepper.
    • Rub the seasoning mixture generously onto both sides of the catfish fillets.
  2. Cook the Catfish:
    • Heat the butter and olive oil in a cast-iron skillet or non-stick pan over medium-high heat.
    • Once hot, add the seasoned catfish fillets and cook for 3-4 minutes per side, or until the fish is cooked through and the outside has a crispy blackened crust.

Lemon Pepper Catfish:

Ingredients:

  • 2 catfish fillets (or more depending on servings)
  • 1 tablespoon lemon zest
  • 1 teaspoon lemon juice
  • 1 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • 1 tablespoon butter or olive oil

Instructions:

  1. Prepare the Lemon Pepper Seasoning:
    • In a small bowl, mix lemon zest, lemon juice, black pepper, garlic powder, onion powder, and salt.
  2. Cook the Catfish:
    • Heat the butter or olive oil in a pan over medium-high heat.
    • Season the catfish fillets with the lemon pepper mixture.
    • Cook the fillets for 3-4 minutes per side until the fish is flaky and golden brown.

Cajun Shrimp:

Ingredients:

  • 1 lb shrimp (peeled and deveined)
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional for extra flavor)
  • 1/2 teaspoon onion powder
  • 1 tablespoon fresh lemon juice
  • Salt to taste

Instructions:

  1. Season the Shrimp:
    • In a bowl, toss the shrimp with Cajun seasoning, garlic powder, paprika, onion powder, and salt. Make sure the shrimp are well coated.
  2. Cook the Shrimp:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the seasoned shrimp to the skillet and cook for 2-3 minutes per side, or until the shrimp turn pink and opaque.
    • Drizzle with fresh lemon juice right before serving.

Putting It All Together:

  • Serve the steamed vegetable medley alongside the blackened and lemon pepper catfish fillets for a satisfying meal.
