🌶️ Classic Stacked Enchiladas Recipe
Ingredients (Serves 4)

12 corn tortillas

2 cups red or green enchilada sauce (homemade or store-bought)

2 cups shredded cooked chicken, ground beef, or beans (optional)

2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

1 small onion, finely chopped (optional)

2 tablespoons oil (for softening tortillas)

Toppings: fried egg, chopped cilantro, sour cream, avocado, sliced olives, etc.
Instructions
1. Prepare the Ingredients

Warm the enchilada sauce in a saucepan.

If using meat, cook and season it as desired.

Lightly fry each tortilla in oil for a few seconds per side to soften. Drain on paper towels.
2. Build the Stacks
You can build them in individual portions or as a layered casserole in a baking dish.
Individual style (traditional):

Preheat oven to 375°F (190°C).

On a baking sheet or dish, place one tortilla. Spoon a bit of enchilada sauce over it.

Add a layer of meat or beans, cheese, and onions.

Top with another tortilla, more sauce, and fillings.

Repeat for 3 layers total (ending with cheese and sauce on top).

Repeat for remaining servings.
Casserole style:

In a greased 9×13″ baking dish, layer:

Sauce → tortillas → meat/beans → cheese → sauce.

Repeat 3 layers, finishing with cheese and sauce on top.

3. Bake

Bake for 15–20 minutes until the cheese is bubbly and everything is heated through.
4. Optional: Add a Fried Egg

In New Mexico, it’s traditional to top each stack with a fried egg just before serving.

Garnish with cilantro, avocado, or sour cream.
