Spicy Beef Taquitos

Here’s a Spicy Beef Taquitos recipe that’s crispy, flavorful, and packs just the right amount of heat. These are perfect for game day, parties, or a quick dinner, and can be baked or fried — your choice!


🌮 Spicy Beef Taquitos

⭐ Ingredients

For the Filling:

  • 1 lb ground beef (or shredded cooked beef)

  • ½ cup onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tbsp tomato paste

  • 1–2 chipotle peppers in adobo, minced (adjust for heat)

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • ½ tsp smoked paprika

  • ¼ tsp cayenne pepper (optional)

  • Salt & black pepper, to taste

  • ½ cup shredded cheddar, Monterey Jack, or a blend

  • 2 tbsp cream cheese or sour cream (optional for creaminess)

For the Taquitos:

  • 12–15 small corn tortillas (or flour if preferred)

  • Oil for brushing or frying

Optional Toppings / Dips:

  • Guacamole

  • Salsa or pico de gallo

  • Sour cream

  • Queso dip

  • Chopped cilantro or jalapeños


🔪 Instructions

1. Cook the Beef Filling:

  • In a skillet over medium heat, sauté onions in a bit of oil until soft (3–4 minutes).

  • Add garlic and cook 30 seconds.

  • Add ground beef and cook until browned. Drain excess fat.

  • Stir in tomato paste, chipotle peppers, and all seasonings. Cook 2–3 minutes more.

  • Remove from heat and stir in cheese and cream cheese (if using). Let it cool slightly.

2. Prep the Tortillas:

  • Warm tortillas in the microwave (wrap in a damp towel for 30 seconds) or on a skillet to make them pliable and avoid tearing.

3. Assemble Taquitos:

  • Place 2–3 tablespoons of filling along one edge of a tortilla.

  • Roll tightly and place seam-side down on a baking sheet (if baking) or set aside for frying.


🔥 Cooking Methods

Option 1: Baked Taquitos

  • Preheat oven to 425°F (220°C).

  • Place rolled taquitos seam-side down on a parchment-lined baking sheet.

  • Brush or spray lightly with oil.

  • Bake for 15–20 minutes, flipping halfway for even crispness.

Option 2: Fried Taquitos

  • Heat about ½ inch of oil in a skillet over medium heat.

  • Fry taquitos seam-side down, 2–3 at a time, turning until golden and crispy (about 2–3 minutes per side).

  • Drain on paper towels.


🌶️ Tips & Variations

  • Make it spicier: Add diced jalapeños, extra chipotle, or a dash of hot sauce to the filling.

  • Add veggies: Corn, black beans, or finely diced bell peppers can bulk up the filling.

  • Air fryer: Air fry at 400°F (200°C) for 8–10 minutes, flipping halfway.
