🧀 Spiced Citrus Marinated Feta
Ingredients:

8 oz block of feta cheese (Greek-style, firm)

Zest of 1 lemon

1/2 teaspoon red pepper flakes (adjust to taste)

1 teaspoon whole black peppercorns

1/2 teaspoon fennel seeds (optional, adds a nice aromatic note)

1/2 teaspoon coriander seeds (lightly crushed)

1 small sprig rosemary or thyme (or both)

1–2 garlic cloves, thinly sliced

1/2 cup extra virgin olive oil (more if needed to cover)

Optional: a few strips of lemon/orange peel (use a veggie peeler)
Instructions:

Prep the feta:

Cut feta into cubes (about 1-inch pieces) or leave whole for a dramatic presentation.

Pat dry with paper towels to reduce excess brine moisture.

Toast spices (optional, but recommended):

In a dry skillet over medium heat, lightly toast the coriander and fennel seeds until fragrant (1–2 minutes). Let cool.

Layer and marinate:

In a clean jar or shallow dish, layer feta with citrus zest, garlic slices, pepper flakes, peppercorns, toasted spices, rosemary/thyme, and citrus peel if using.

Pour olive oil over until feta is fully submerged.
