Here’s a rich, comforting, and elegant take on a pasta favorite: Spaghetti Crémeux au Poulet Grillé — creamy spaghetti with tender grilled chicken, laced with garlic, herbs, and a velvety cream sauce. It’s French-inspired in name and texture, but simple and familiar enough for weeknight dinner or casual entertaining.

🧾 Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp dried thyme or herbes de Provence

  • Salt & pepper, to taste

For the Pasta:

  • 12 oz (340g) spaghetti

  • Salted water, for boiling

For the Cream Sauce:

  • 2 tbsp butter

  • 2 cloves garlic, minced

  • 1 small shallot, finely chopped (or 1/4 onion)

  • 1/2 cup dry white wine (or chicken broth)

  • 1 1/2 cups heavy cream (or crème fraîche for a richer flavor)

  • 1/2 cup grated Parmesan or Gruyère cheese

  • Salt & pepper, to taste

  • Fresh parsley or chives, chopped (for garnish)

  • Optional: zest of 1 lemon or a squeeze of lemon juice


🔥 Instructions

1. Grill the Chicken:

  1. Rub chicken with olive oil, garlic powder, thyme, salt, and pepper.

  2. Grill in a pan or on a grill for 6–7 minutes per side, until cooked through.

  3. Let rest 5 minutes, then slice thinly.

2. Cook the Pasta:

  • Bring a pot of salted water to a boil.

  • Cook spaghetti until al dente, then drain and reserve 1/2 cup of pasta water.

3. Make the Sauce:

  1. In a large skillet, melt butter over medium heat.

  2. Add garlic and shallot; sauté until soft and fragrant (2–3 minutes).

  3. Deglaze with wine; simmer until reduced by half.

  4. Stir in cream and simmer 3–4 minutes until thickened slightly.

  5. Add cheese, season with salt and pepper, and stir until smooth.

4. Combine:

  • Add cooked spaghetti to the sauce, toss gently.

  • Add a splash of reserved pasta water if needed to loosen.

  • Top with sliced grilled chicken and herbs.

  • Add lemon zest or juice if desired for brightness.


📝 Tips:

  • For extra depth, add a spoonful of Dijon mustard or a pinch of nutmeg to the sauce.

  • Swap chicken for shrimp or mushrooms for variation.

  • Want it extra creamy? Stir in a dollop of cream cheese or mascarpone at the end.
