Southern Salmon Patties

Here’s a classic, no-frills recipe for Southern Salmon Patties — crispy on the outside, tender and flavorful inside. This beloved Southern staple is easy, budget-friendly, and packed with comfort.


🐟 Southern Salmon Patties (a.k.a. Salmon Croquettes)

🍽️ Serves: 4

⏱️ Ready in: 25–30 minutes


✅ Ingredients:

  • 1 (14.75 oz) can pink salmon, drained and flaked

  • 1 egg

  • ¼ cup finely diced onion

  • ¼ cup finely diced green bell pepper (optional but traditional)

  • 1–2 tsp hot sauce or ¼ tsp cayenne (optional for kick)

  • ¼ tsp garlic powder

  • ¼ tsp black pepper

  • Salt to taste (if salmon isn’t already salty)

  • ½ cup cornmeal (or crushed saltine crackers or breadcrumbs)

  • 2–3 tbsp all-purpose flour (to help bind and crisp)

  • Oil for frying (vegetable, canola, or peanut oil)


👩‍🍳 Instructions:

  1. Prep the salmon:

    • Drain the salmon and remove the large bones and skin (optional — they’re edible but can be gritty).

    • Flake the salmon into a bowl.

  2. Mix the patties:

    • Add egg, onion, bell pepper, seasonings, cornmeal, and flour.

    • Mix gently until just combined. Mixture should be moist but able to hold shape.

    • If it’s too wet, add a bit more cornmeal or flour.

  3. Shape & fry:

    • Form into 6–8 patties about ½ inch thick.

    • Heat about ¼ inch of oil in a cast-iron skillet over medium heat.

    • Fry patties 3–4 minutes per side, or until golden brown and crispy.

    • Drain on paper towels.


🍽️ Serving Suggestions:

  • Buttermilk cornbread or baked macaroni and cheese

  • Coleslaw, collard greens, or green beans

  • A side of hot sauce, remoulade, or even ketchup for dipping


🔁 Tips & Variations:

  • Sub fresh cooked salmon if you have leftovers.

  • Add a little lemon zest or parsley for brightness.

  • Want it crispier? Chill patties in the fridge 15 minutes before frying.
