Soft Lemon Biscuits—

Here’s a simple and delicious recipe for Soft Lemon Biscuits—perfect for breakfast, brunch, or a light snack!

Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar (plus extra for sprinkling)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter (cubed)
  • 1/2 cup buttermilk (or whole milk)
  • 1 large egg
  • 1 tablespoon lemon zest (from about 1 lemon)
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon vanilla extract (optional)
  • 2 tablespoons heavy cream (for brushing on top)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Make the Biscuit Dough:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
    • Add the cold, cubed butter to the dry ingredients. Use a pastry cutter, fork, or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs (with some pea-sized butter bits).
  3. Add Wet Ingredients:
    • In a separate bowl, whisk together the buttermilk, egg, lemon zest, lemon juice, and vanilla extract (if using).
    • Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix—this will keep your biscuits tender!
  4. Shape the Biscuits:
    • Turn the dough out onto a lightly floured surface and gently pat it into a rough rectangle, about 1/2 inch thick.
    • Fold the dough over itself once or twice (this helps create flaky layers), then gently roll it out again to about 1-inch thickness.
    • Use a biscuit cutter or a round glass to cut out the biscuits, pressing straight down without twisting. You should get about 8-10 biscuits, depending on the size of your cutter.
  5. Bake the Biscuits:
    • Place the biscuits on the prepared baking sheet, making sure they’re touching for soft sides.
    • Brush the tops with a little heavy cream for a golden finish.
    • Sprinkle a little sugar on top for added sweetness (optional).
    • Bake for 12-15 minutes, or until the tops are golden and the biscuits have puffed up.
  6. Serve:
    • Let the biscuits cool slightly before serving. They are perfect on their own or with a little butter, jam, or honey!
