🍗 Smothered Chicken with Creamed Spinach, Bacon & Mushrooms
Juicy chicken breasts smothered in a creamy spinach sauce loaded with crispy bacon and sautéed mushrooms — it’s low-carb, keto-friendly, and ultra-satisfying.
📝 Ingredients (serves 4):
For the Chicken:

4 boneless, skinless chicken breasts

Salt & black pepper

1 tsp garlic powder
-
1 tsp paprika (optional)

1–2 tbsp olive oil or butter (for searing)
For the Creamed Spinach Sauce:

4 strips of bacon, chopped
-
1 cup mushrooms, sliced (baby bella or white)

3–4 cloves garlic, minced
-
2 cups fresh spinach (or 1 cup frozen, squeezed dry)

¾ cup heavy cream (or half & half for lighter version)

½ cup Parmesan cheese, grated
-
Optional: pinch of red pepper flakes, nutmeg, or Dijon mustard for added depth
🔥 Instructions:
1. Cook the Bacon:
In a large skillet over medium heat, cook the chopped bacon until crisp. Remove and set aside.
Leave about 1 tbsp of bacon fat in the skillet.
2. Sear the Chicken:

Season chicken breasts with salt, pepper, garlic powder, and paprika.

In the same skillet, sear chicken over medium-high heat in olive oil or butter (3–4 min per side) until golden brown.
Remove and set aside (chicken will finish cooking later in the sauce).
3. Sauté Mushrooms & Garlic:
Add mushrooms to the same pan. Cook 4–5 minutes until browned.
Add garlic and sauté 1 minute more.
4. Add Spinach:
Stir in spinach and cook until wilted (if using fresh) or heated through (if frozen).
5. Make the Cream Sauce:

Reduce heat to low.

Stir in heavy cream and Parmesan cheese. Let simmer gently for 2–3 minutes until thickened slightly.

Return cooked bacon to the pan.
6. Return Chicken to the Sauce:

Nestle chicken breasts into the sauce.

Cover and simmer 5–8 minutes, or until chicken is fully cooked through (internal temp: 165°F / 74°C).
7. Serve:
Spoon the creamy mushroom-spinach-bacon sauce over the chicken.
Serve with mashed potatoes, cauliflower mash, rice, or crusty bread.
