Slow Cooker Chicken Fajitas

Here’s a super easy, flavorful recipe for Slow Cooker Chicken Fajitas — just toss everything in the slow cooker and come home to tender, juicy chicken and perfectly seasoned veggies. Great for busy weeknights or meal prep!


🌮🍗 Slow Cooker Chicken Fajitas

📝 Ingredients:

  • 1 ½ to 2 lbs boneless, skinless chicken breasts (or thighs)

  • 3 bell peppers, sliced (use a mix of red, yellow, green)

  • 1 medium onion, sliced

  • 1 can (14.5 oz) diced tomatoes (drained) or 1/2 cup salsa

  • 2 tsp chili powder

  • 1 tsp cumin

  • 1 tsp paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Juice of 1 lime (or 1–2 tbsp)

  • Optional: 1 tbsp olive oil for richness

  • Optional: chopped cilantro for garnish


🥣 Instructions:

1. Layer in the Slow Cooker:

  • Add sliced onions and peppers to the bottom of the slow cooker.

  • Place chicken on top of the vegetables.

  • Sprinkle with all the seasonings.

  • Add diced tomatoes (or salsa) and lime juice over the top.


2. Cook:

  • Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until chicken is fully cooked and easily shredded.


3. Shred Chicken:

  • Remove chicken, shred with two forks, and return to the slow cooker.

  • Stir everything together to coat in juices and flavors.


4. Serve:

  • Spoon into warm flour or corn tortillas.

  • Add your favorite toppings: sour cream, shredded cheese, avocado, guacamole, salsa, jalapeños, fresh cilantro, etc.


🔄 Variations:

  • Add black beans or corn during the last hour of cooking.

  • Make it spicier with a diced jalapeño or extra chili powder.

  • Use chicken thighs for a juicier texture.

  • Stuffed peppers
