Here’s a comforting recipe for a Slow-Cooked Beef Casserole with Creamy Mashed Potatoes — a perfect dish for cozy evenings or hearty family dinners.


🥘 Slow-Cooked Beef Casserole with Creamy Mashed Potatoes

Serves: 4–6 | Prep time: 20 mins | Cook time: 3–4 hours


🥩 For the Beef Casserole:

Ingredients:

  • 2 tbsp olive oil

  • 2 lbs (900g) chuck beef or stewing steak, cut into chunks

  • 2 onions, chopped

  • 2 carrots, sliced

  • 2 celery sticks, chopped

  • 3 cloves garlic, minced

  • 2 tbsp tomato paste

  • 2 tbsp plain flour

  • 1 cup red wine (optional, or use more stock)

  • 2 cups beef stock

  • 1 tbsp Worcestershire sauce

  • 2 bay leaves

  • 1 tsp dried thyme

  • Salt & black pepper to taste

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the Beef: In a large oven-safe pot or Dutch oven, heat oil over medium-high. Brown beef in batches, then set aside.

  2. Sauté Veggies: In the same pot, add onions, carrots, and celery. Cook for 5 minutes, then add garlic and tomato paste. Stir in flour and cook for another 2 minutes.

  3. Deglaze & Simmer: Pour in red wine to deglaze the pan, scraping up any bits. Let it reduce slightly. Add beef stock, Worcestershire sauce, herbs, and browned beef.

  4. Slow Cook: Cover and cook in a preheated oven at 160°C / 325°F for 3–4 hours, or simmer gently on the stovetop. Meat should be tender and sauce thickened.


🥔 For the Creamy Mashed Potatoes:

Ingredients:

  • 2 lbs (900g) potatoes, peeled and chopped

  • 4 tbsp butter

  • ½ cup heavy cream or milk (warm)

  • Salt and white pepper to taste

  • Optional: a few tablespoons of cream cheese or sour cream for extra richness

Instructions:

  1. Boil Potatoes: In salted water, boil potatoes until fork-tender (about 15–20 minutes). Drain well.

  2. Mash & Mix: Mash potatoes until smooth. Stir in butter, warm cream, and seasonings. Beat until creamy and fluffy.


🍽 To Serve:

Spoon mashed potatoes onto a plate or shallow bowl, ladle rich beef casserole on top, and garnish with parsley.
