For the chicken:

  • Salt & pepper, to taste

  • 1/2 cup low-sodium soy sauce

  • 1/3 cup honey or brown sugar

  • 1/4 cup hoisin sauce (or extra soy sauce + honey if unavailable)

  • 2 tbsp rice vinegar or apple cider vinegar

  • 2 tbsp sriracha or chili garlic sauce (optional for heat)

  • 2 cloves garlic, minced

  • 1 tbsp grated fresh ginger (or 1 tsp ground)

  • 1 tbsp sesame oil

  • 1 tbsp cornstarch + 2 tbsp water (slurry to thicken sauce)

For serving:

  • 8 oz rice noodles, soba noodles, or spaghetti

  • Sliced green onions

  • Toasted sesame seeds

  • Steamed veggies (e.g. broccoli, snow peas, bell peppers)

  • Fresh cilantro (optional)

  • Lime wedges (optional)

1. Add chicken & sauce to slow cooker:

Place chicken in the bottom of your slow cooker. In a bowl, whisk together soy sauce, honey, hoisin, vinegar, sriracha (if using), garlic, ginger, and sesame oil. Pour sauce over chicken.

2. Cook:

Cover and cook on:

  • Low for 6–7 hours, or

  • High for 3–4 hours, until chicken is tender and easily shredded.

3. Shred & thicken:

Remove chicken and shred with two forks. In a small bowl, mix cornstarch and water to make a slurry. Stir into sauce in the slow cooker. Return chicken and stir to coat. Let it cook on high for another 10–15 minutes to thicken the sauce.

4. Cook noodles:

Prepare noodles according to package directions. Drain and toss lightly with a bit of sesame oil to prevent sticking.

5. Assemble:

Serve sticky chicken over a bed of noodles. Spoon extra sauce on top. Garnish with green onions, sesame seeds, and optional extras.
