Simple 3 Ingredient Sponge Cake

Here’s a simple 3-ingredient sponge cake recipe — light, fluffy, and perfect as a base for layered cakes, trifles, or served plain with fruit and cream.


🍰 3-Ingredient Sponge Cake

Ingredients:

  • 4 large eggs

  • 1 cup (200g) granulated sugar

  • 1 cup (120g) all-purpose flour


Instructions:

  1. Preheat the oven to 350°F (175°C).
    Grease and line the bottom of an 8-inch (20 cm) round cake pan with parchment paper.

  2. Beat the eggs and sugar:
    In a large mixing bowl, use an electric mixer to beat the eggs and sugar on high speed for 7–10 minutes, until the mixture is pale, thick, and tripled in volume.

  3. Fold in the flour:
    Sift the flour over the egg mixture. Gently fold it in using a spatula in batches — be careful not to deflate the mixture. Do not overmix.

  4. Bake:
    Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

  5. Cool:
    Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.


✅ Tips:

  • For best volume, eggs should be at room temperature.

  • Don’t open the oven door while baking — sponge cakes are delicate.

  • This cake is best used as a base for layered cakes or rolled sponge (Swiss roll).
