🍤 Shrimp Linguine
🍽️ Servings: 4
⏱️ Total Time: ~25 minutes
🧂 Ingredients:
-
8 oz (225 g) linguine pasta
-
1 lb (450 g) shrimp, peeled and deveined
-
2 tbsp olive oil
-
3–4 garlic cloves, minced
-
½ tsp red pepper flakes (optional, for heat)
-
½ cup dry white wine (or chicken broth or lemon juice)
-
Zest and juice of 1 lemon
-
2 tbsp butter
-
Salt & pepper to taste
-
2 tbsp chopped fresh parsley
-
Grated Parmesan (optional, for serving)
👨🍳 Instructions:
1. Cook the Pasta:
-
Bring a large pot of salted water to a boil.
-
Cook linguine until al dente according to package directions.
-
Reserve ½ cup of pasta water, then drain.
2. Sauté the Shrimp:
-
While pasta cooks, heat olive oil in a large skillet over medium-high heat.
-
Add shrimp in a single layer, season with salt and pepper.
-
Cook 1–2 minutes per side until pink and opaque. Remove and set aside.
3. Make the Sauce:
-
In the same skillet, add garlic and red pepper flakes (if using). Sauté for 30 seconds until fragrant.
-
Pour in white wine (or broth/lemon juice), scraping up any browned bits from the pan.
-
Simmer for 2–3 minutes to reduce slightly.
-
Stir in lemon juice, zest, and butter. Season with salt and pepper.
4. Toss It All Together:
-
Return shrimp to the skillet.
-
Add cooked linguine and a splash of reserved pasta water as needed to loosen the sauce.
-
Toss to coat everything evenly and heat through.
5. Serve:
-
Garnish with fresh parsley and grated Parmesan (if desired).
-
Serve with lemon wedges and crusty bread for a complete meal.
🌀 Variations:
-
Add cherry tomatoes, spinach, or mushrooms for extra veggies.
-
Make it creamy by adding ¼ cup of heavy cream after deglazing.
-
Swap linguine for spaghetti, fettuccine, or a gluten-free pasta.
