🌽 Shrimp, Corn, Potatoes & Smoked Sausage Foil Packs

🛒 Ingredients:

  • 1 lb large shrimp, peeled and deveined (tails on or off)

  • 12 oz smoked sausage, sliced into ½-inch rounds

  • 2 ears of corn, cut into thirds or quarters

  • 1 lb baby potatoes, halved or quartered if large

  • 3 tbsp olive oil (or melted butter for richer flavor)

  • 1 tbsp Old Bay seasoning (or Cajun seasoning)

  • 1 tsp garlic powder

  • Salt and black pepper to taste

  • 1 lemon, cut into wedges

  • Optional: chopped parsley, for garnish


🥣 Instructions:

1. Preheat & Prep:

  • Grill: Preheat grill to medium-high heat (about 400°F/200°C).

  • Oven: Preheat oven to 425°F (220°C).

  • Cut 4 large sheets of heavy-duty aluminum foil (about 12×18 inches).

2. Parboil Potatoes (recommended):

  • Boil potatoes for 10 minutes until just fork-tender. Drain and cool slightly.

  • Skip this step if you dice them small enough, but parboiling ensures even cooking.

3. Combine Ingredients:

  • In a large bowl, mix shrimp, sausage, corn pieces, and potatoes.

  • Drizzle with olive oil or melted butter.

  • Add Old Bay, garlic powder, salt, and pepper. Toss to coat well.

4. Assemble Foil Packs:

  • Divide mixture evenly among foil sheets.

  • Fold and seal into packets: bring long sides together and fold over, then fold in the short ends to create a tight seal.

5. Cook:

  • Grill: Place packets on the grill; cook for 20–25 minutes, flipping once halfway.

  • Oven: Bake packets on a baking sheet for 25–30 minutes.

6. Serve:

  • Carefully open packets (watch for steam).

  • Squeeze fresh lemon juice over each and garnish with parsley.

  • Add butter pats on top before sealing for extra richness.

  • Use precooked sausage for quicker cooking.

  • Great with a side of garlic bread or a simple green salad.
