For the Mashed Potatoes:

  • 2 lbs (about 5–6 medium) Yukon gold or russet potatoes, peeled and cubed

  • 4 tbsp butter

  • 1/2–3/4 cup milk or cream, warmed

  • Salt, to taste

  • Optional: garlic powder or roasted garlic for flavor

1. Cook & Shred the Chicken (if not using pre-cooked):

  • Boil or simmer 2–3 chicken breasts in broth or water with salt for about 15–20 minutes.

  • Remove and shred with two forks.

2. Make the Gravy:

  • In a large skillet or saucepan, melt butter over medium heat.

  • Stir in the flour and cook for 1–2 minutes, whisking constantly, to make a roux.

  • Gradually whisk in chicken broth until smooth.

  • Add garlic powder, onion powder, salt, and pepper.

  • Let simmer for 5–8 minutes until thickened, stirring occasionally.

  • Stir in the shredded chicken and simmer for another 5 minutes to warm through.

  • Optional: Add a splash of cream for a creamier gravy.

3. Make the Mashed Potatoes:

  • Boil cubed potatoes in salted water until tender (about 15–20 minutes).

  • Drain and mash with butter, warm milk/cream, and salt.

  • Whip until smooth or leave chunky, depending on your preference.

4. Assemble:

  • Scoop mashed potatoes onto plates or bowls.

  • Spoon a generous portion of shredded chicken gravy over the top.
