Savory Veggie & Ham Loaf

Ingredients

1 cup cooked ham, finely chopped

1 cup grated zucchini (squeeze out excess moisture)

1/2 cup grated carrot

1/2 cup finely chopped onion (or green onion)

1/2 cup grated cheese (cheddar, Swiss, or a mix)

1 1/2 cups all-purpose flour

2 tsp baking powder
-
1/2 tsp salt
-
1/4 tsp black pepper
-
1 tsp dried herbs (thyme, oregano, or Italian blend)

3 large eggs

1/3 cup olive oil or melted butter

1/2 cup milk
Instructions

Preheat oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper.

Mix dry ingredients:
In a large bowl, whisk together flour, baking powder, salt, pepper, and herbs. -
Add veggies, ham & cheese:
Stir in zucchini, carrot, onion, ham, and cheese until evenly coated in the flour mixture. -
Combine wet ingredients:
In another bowl, whisk eggs, milk, and oil. Pour into dry mixture and stir until just combined — do not overmix. -
Bake:
Pour batter into the prepared loaf pan and smooth the top.
Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean and the top is golden. -
Cool & Serve:
Let cool in the pan for 10 minutes before removing. Serve warm or at room temp. Great with mustard or chutney.
