Here’s a hearty and flavorful recipe for a Savory Veggie & Ham Loaf — perfect for brunch, lunchboxes, or a light dinner. It’s packed with vegetables, smoky ham, and cheese, all bound together in a moist, sliceable loaf.


Savory Veggie & Ham Loaf

 Prep Time: 20 minutes
 Bake Time: 45–55 minutes
 Serves: 6–8


Ingredients

  • 1 cup cooked ham, finely chopped

  • 1 cup grated zucchini (squeeze out excess moisture)

  • 1/2 cup grated carrot

  • 1/2 cup finely chopped onion (or green onion)

  • 1/2 cup grated cheese (cheddar, Swiss, or a mix)

  • 1 1/2 cups all-purpose flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tsp dried herbs (thyme, oregano, or Italian blend)

  • 3 large eggs

  • 1/3 cup olive oil or melted butter

  • 1/2 cup milk


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper.

  2. Mix dry ingredients:
    In a large bowl, whisk together flour, baking powder, salt, pepper, and herbs.

  3. Add veggies, ham & cheese:
    Stir in zucchini, carrot, onion, ham, and cheese until evenly coated in the flour mixture.

  4. Combine wet ingredients:
    In another bowl, whisk eggs, milk, and oil. Pour into dry mixture and stir until just combined — do not overmix.

  5. Bake:
    Pour batter into the prepared loaf pan and smooth the top.
    Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean and the top is golden.

  6. Cool & Serve:
    Let cool in the pan for 10 minutes before removing. Serve warm or at room temp. Great with mustard or chutney.


 Optional Add-Ins:

  • Chopped spinach or bell pepper

  • Sun-dried tomatoes

  • Crumbled feta instead of cheddar

  • Swap ham for cooked bacon or turkey
