Here’s a delicious recipe for Savory Garlic Mushroom Chicken with Spinach — a rich, creamy, and comforting one-pan dish that’s perfect for dinner. It’s low-carb, high-protein, and full of flavor.


🍄 Savory Garlic Mushroom Chicken with Spinach

Servings: 4

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)
  • Salt & pepper, to taste
  • 1 tsp paprika (optional)
  • 1–2 tbsp olive oil (or butter)

For the Sauce:

  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced (cremini or button)
  • 1 cup heavy cream (or half-and-half for lighter version)
  • ½ cup chicken broth
  • 1 tsp Italian seasoning (or thyme/oregano)
  • 2 cups fresh baby spinach
  • ½ cup grated Parmesan cheese
  • Salt & pepper, to taste
  • Crushed red pepper flakes (optional, for heat)

Instructions:

1. Prepare and Sear the Chicken:

  • Season chicken with salt, pepper, and paprika (if using).
  • In a large skillet over medium-high heat, add olive oil.
  • Sear the chicken for 5–7 minutes per side until golden brown and cooked through.
  • Remove and set aside (keep warm).

2. Make the Garlic Mushroom Sauce:

  • In the same pan, add butter.
  • Sauté the garlic for 30 seconds until fragrant.
  • Add mushrooms and cook until they release moisture and start to brown (5–6 minutes).
  • Pour in chicken broth and stir up any brown bits from the bottom of the pan.
  • Reduce heat to medium-low, add cream and Italian seasoning. Simmer for 5 minutes.

3. Add Spinach and Cheese:

  • Stir in spinach and let it wilt.
  • Add Parmesan cheese and stir until melted and sauce is creamy.
  • Taste and adjust seasoning with salt, pepper, or chili flakes.

4. Combine:

  • Return the chicken to the pan and spoon the sauce over the top.
  • Simmer for 2–3 more minutes to heat through.

Serving Suggestions:

  • Serve over mashed potatoes, pasta, rice, or cauliflower mash for low-carb.
  • Garnish with fresh parsley or extra Parmesan.
