This dish makes a great side or can be served over rice or noodles for a complete meal. The umami from the mushrooms and the freshness of broccoli come together beautifully with a savory stir-fry sauce.

Sautéed Mushroom and Broccoli Stir-Fry

Ingredients:

For the Stir-Fry:

  • 2 tablespoons vegetable oil (or sesame oil for extra flavor)
  • 2 cups mushrooms, sliced (button, cremini, or shiitake work well)
  • 2 cups broccoli florets (about 1 small head of broccoli)
  • 1 small onion, thinly sliced (optional)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated or finely minced (optional)
  • 1/4 cup low-sodium soy sauce or tamari (for a gluten-free option)
  • 1 tablespoon rice vinegar or lemon juice (for brightness)
  • 1 tablespoon hoisin sauce (optional, for sweetness)
  • 1 teaspoon sesame oil (for extra flavor)
  • 1 tablespoon cornstarch (optional, to thicken sauce)
  • 1/2 cup water or vegetable broth (for sauce)
  • Salt and pepper, to taste
  • 1 tablespoon sesame seeds (optional, for garnish)
  • Fresh cilantro or green onions (optional, for garnish)

Instructions:

  1. Prepare the vegetables: Clean and slice the mushrooms. Cut the broccoli into bite-sized florets. If you’re using onion, thinly slice it.

  2. Blanch the broccoli (optional): If you like your broccoli a little softer, you can blanch it first. Bring a small pot of salted water to a boil, add the broccoli, and cook for 2-3 minutes until tender but still bright green. Drain and set aside. (This step is optional if you prefer the broccoli to be slightly crunchy.)

  3. Sauté the mushrooms and onions: Heat the vegetable oil (or sesame oil) in a large skillet or wok over medium-high heat. Add the sliced mushrooms and cook for about 5-7 minutes, stirring occasionally, until they release their moisture and become tender. If using onion, add it at this point and sauté for an additional 2-3 minutes until it becomes soft and translucent.

  4. Add garlic and ginger: Add the minced garlic and grated ginger (if using) to the pan. Stir for 30 seconds until fragrant.

  5. Add broccoli and stir-fry sauce: Add the broccoli to the skillet. In a small bowl, whisk together the soy sauce, rice vinegar (or lemon juice), hoisin sauce (optional), sesame oil, cornstarch (if using), and water or vegetable broth. Pour this sauce over the mushrooms and broccoli.

  6. Cook together: Stir everything together and cook for another 3-4 minutes until the broccoli is tender and the sauce has thickened slightly. If you like a saucier stir-fry, add a little more water or broth.

  7. Season to taste: Taste the stir-fry and adjust the seasoning with salt, pepper, or a little extra soy sauce if needed.

  8. Serve and garnish: Remove the stir-fry from the heat. Garnish with sesame seeds and fresh cilantro or green onions if desired. Serve over rice or noodles for a complete meal!


Tips:

  • Add other veggies: Feel free to add other veggies like bell peppers, carrots, or snap peas to the stir-fry.
  • Make it spicy: If you like heat, add a pinch of red pepper flakes or some sliced fresh chili.
  • Add protein: You can also add tofu, tempeh, or chicken for extra protein.
